Paleo Recipe: NomNom Sweet Potato, Bacon and Egg Salad
Wait a minute, you had me at " BACON"!

I have to hand it to Christie, she is one amazing cook around the kitchen when she wants.  In fact she puts me to shame in the kitchen often when it comes to getting creative with our cooking.  Her specialty is making something from nothing, where I'm the opposite.  I can make something from nothing, but it usually starts with a phone call.   (Thank goodness for the Thai restaurant down the street)

The below recipe (from the Paleo Cookbook ) is one of those dishes.  She whipped it up so quickly I was sure it was pre-made.  Good thing I didn't make a big deal about it otherwise the egg might have ended up somewhere other than my plate.  It's fast, simple and NomNom!  And our kids loved it too...

Sweet Potato, Bacon and Egg Salad Paleo Recipe


Ingredients



  • 2/3 cup diced sweet potato

  • 2 eggs

  • 2 rashes of bacon, diced using meat only

  • 1tbs oil

  • 4tbs dill, finely chopped

  • 2tbs mayonnaise

  • 2tbs lemon juice


Instructions



  1. Boil eggs in water for 4‐6 minutes. Peel and dice eggs.

  2. Boil sweet potato for 4‐5 minutes or until cooked through.

  3. Place a frying pan on medium‐high heat, add olive oil and bacon and fry until browned and slightly crunchy.

  4. In a small bowl, combine dill, mayonnaise and lemon juice.

  5. Place eggs, sweet potato, bacon and mayonnaise sauce into a medium size serving bowl.

  6. Combine well.

  7. Serve.
