As busy parents, Christie and I often find ourselves rushing around last-minute to piece together healthy meals for our 2 daughters, Chardonae and Brie. It's a priority for us to make sure they are getting healthy meal options every day, and as busy as we might find ourselves, we make sure to commit the time to fueling them with the cleanest fuel we can.
A life saver for us has been the Recipe Finder feature on the Chicken.ca website. We can quickly type in the meal type we want, dietary restrictions (i.e. gluten free, low-sodium, etc), as well as the cut of chicken that we plan to prepare. It's awesome!

A Meal to quell my HANGRYNESS: The Easiest Ever Thai Chicken Express
A couple of weeks ago, after a long day out playing in the hot summer sun, we came home tired and HANGRY! We needed something quick, easy and yummy to make sure that total melt down didn't occur with our two little ones ( and me especially - you don't want to see me when I'm HANGRY ).

Thankfully we always have some lean chicken breasts on hand, thawed and ready to go. Logging on to the Chicken.ca Recipe Finder, we opted to have a go and cook the " Easiest Ever Thai Chicken Express " meal. And luckily it lived up to its name.

Of course, being the paleo/gluten-free family that we are, we made some little tweaks to the recipe to suit our dietary needs. Here's the list of ingredients we used:
- Ground chicken
- Purple onion
- Mushroom
- Spinach
- Steamed broccoli
- Cherry tomatoes
- Steak spice
- Coconut oil
